-1 cup quinoa, rinsed and drained
-2 cups vegetable broth
-1 red bell pepper, diced
-1 yellow bell pepper, diced
-1 zucchini, sliced into rounds
-1 yellow squash, sliced into rounds
-2 tablespoons olive oil
-Salt and pepper to taste
-Optional: 2 tablespoons of freshly chopped parsley for garnish
1. Preheat the oven to 400 degrees F. Line a baking sheet with parchment paper.
2. In a medium saucepan over medium heat, add the quinoa and vegetable broth. Bring to a boil then reduce heat to low and cover with a lid. Simmer for 15 minutes or until all liquid is absorbed. Remove from heat and set aside.
3. Place the diced bell peppers, zucchini slices, and yellow squash slices on the prepared baking sheet. Drizzle with olive oil and season with salt and pepper to taste. Toss everything together until evenly coated in oil then spread out in an even layer on the baking sheet.
4. Roast in the preheated oven for 20 minutes, flipping halfway through.
