-1 cup quinoa, rinsed and drained

-2 cups vegetable broth

-1 red bell pepper, diced

-1 yellow bell pepper, diced

-1 zucchini, sliced into rounds

-1 yellow squash, sliced into rounds

-2 tablespoons olive oil
